Introduction:
So the recipe that we are going to see is Eggless mayonnaise. So many of us are merely addicted to mayonnaise as its been widespread in pizza, sandwich, burger and as condiments with fries,crisps etc. So oneday I was short of mayonnaise in my home and I was preparing fries. So that made me to prepare this easy peasy eggless mayonnaise. So come on guys lets dive into the recipe.
Ingredients:
For preparing basic white mayo, you need
- strained/ hung curd / thick yogurt-1cup
- Onions - 2 nos
- Garlic - 5 cloves
- oil- to saute
- salt - to taste
- coriander leaves-1handful
- mintleaves - 1handful
- green chilli - 2 nos
- well ripen avocado - 1 small piece (optional)
- Red chilli- 5-10 nos ( as per your spice level)
- fully ripen tomato- 2 nos
To start this, Take a bowl and add some hung curd/ thick yogurt and whisk it with a spoon and make it creamy. Now peel onions and cut them into 8 pieces. peel garlic cloves also. Take a pan and preheat it. Pour small amount of oil and saute the onions and garlic until their raw smell is gone. Don't saute them too much until them turns color into brown or golden brown. Now let them to cool. Take a blender and add the curd/yogurt and the sauted onion and garlic and salt. Now blend it until it turns creamy. Tadaanhhhh.... basic white mayo is ready. Now if you want to turn it into green masti mayo, just add the coriander leaves, mintleaves, green chilli and the avocado piece(optional) while blending the basic white mayo. Tadaanhhh..... green masti mayo is ready. add tomatos and redchillis while blending basic whitemayo. Tadaanhh...... schezwan chatpata mayo is ready .
Serving Suggestion:
The thing is prepare on the day of consumption. This balances both taste as well as health. Even if surplus mayo is there refrigerate it and use before a week. You can use them as a dip, spread, base etc.
Kids advisory:
As usual, My master chef kiddos should try this amazing recipe but completely under the supervision of mama or dada. Be careful while using knife and stove even when you're under supervision. Clean well the veggies as well your tiny little hands.
Health advisory:
I don't know about whether a toddler can eat this or not so consult elders before feeding them. If you see bubbles or sour smell just discard it and don't take chances in food items.

Health Benefits : Curd / Yogurt is filled with probiotics which is good for gut health. It is loaded with calcium which is essential for bones and teeth. Onions are good source of antioxidants and has anticancer and anti inflammatory properties.Garlic has anti microbial properties and improves blood pressure and cholesterol levels. Mint helps in digestion. Coriander leaves lowers blood sugar level. Tomatoes have antioxidants and vitamins.
