Introduction:
How many of you love soup??? I love them the most. Whenever I go to a restaurent I'll order a soup to appetize me more. I'll try new soups every time. One of which impressed my taste buds are cream of mushroom soup. Today I am going to help you with that recipe without creme and with healthy alternatives. Trust me it tasted same as the restaurent one. So come on put on your aprons and hats my dear little master chefs π¨π³π©π³π², lets do this together.
Ingredients:
- A hand ful of peanuts soaked and pealed
- half coconut sliced or half cup of milk
- 2 medium sized onions - diced into 8 pieces
- ginger one small piece - peeled
- garlic - 2 small cloves peeled
- butter one teaspoon - to grease ( can also use coconut oil)
- Coriander leaves- to garnish
- salt and pepper to taste.
- veggies of your choice ( mushroom, cauliflower, broccoli, or any other veggies boiled)
First of all soak the peanuts and chop the veggies and boil them. once cooked strain them and keep it aside. Now in a blender put the soaked peanuts, coconut pieces / milk , diced onions, garlic and ginger. Blend them to a smooth creamy consistency. Now strain it. Turn on the stove and put a kadai and grease it with butter. Add the strained liquid and put the boiled veggies. add salt and pepper powder to taste. Remember if you add milk no need to add water while blending. Tasty creamy healthy veggie soup is ready.
